Parmigiano-Reggiano also called “The King of Cheeses” is made in Northern Italy. Parmesan is an Italian hard, granular cheese that is produced from cow's milk and is aged ranging from 12 to 36 months. La Razza Dairy, practices the traditional methods of making this delicious cheese and is part of a small consortium that is permitted to use the PDO stamp on their products. It is 100% natural with no additives or preservatives. It is fascinating to learn about the unique and interesting history of Parmigiano-Reggiano and witness the different stages that it takes to process and make this tasty cheese. We enjoyed sampling the cheese from the cure stage to a well-aged finish.
