Pasta Making in Puglia!
No trip to Italy is complete without a pasta making class!
In Lecce, which let me tell you is one of the most beautiful cities in the world, I did a pasta making class to make Puglia's most common pasta - orecchiette.
Orecchiette is a circle type pasta, made with only semolina, water and salt. It has a rough surface that holds onto sauces - which I love!!
First we made the mixture, and then folded and folded to incorporate air into the dough. I love cooking, but this was taxing!!! Then you have to cut the dough and do a certain technique to create its unique shape.
My guide (and friend) told me that in Italy, if you can't make pasta, you aren't ready to be a wife!!
A bit of an antiquated quote, but funny (and I definitely would not be qualified)!!
After the creation of the pasta, tapas, cheeses, olives and wines were sampled, then our pasta was served! It was a fun experience and
I'd say it's a must do if you like cooking, but I wouldn't recommend eating MY pasta!
